Have you ever just had one of those crazy days where you’re so busy going from one thing to the next that you barely even have time to use the bathroom? I had one of those about a week ago. I was preparing to leave for several days to go on a business trip with Joe. I didn’t know that I would be going until just the night before so I suddenly had a never-ending list of things to do to prepare…plus all the daily stuff I normally do. Part of me felt like I was running around in circles all day but in the end I did get some things accomplished. I prepared and packed some food for the trip, I packed a suitcase for myself and for Joe, I made sure that my kids’ laundry was done so they wouldn’t run out of clean clothes while I was away (this is something I know my sisterwives would take care of but I knew they would have plenty of other things keeping them busy since there would be one less mom in at home!).
I made myself stop all the busy-ness so I could focus on spending some quality time with the little ones since I knew I would miss them so much. There is something very comforting just knowing that the kids will still have their same routine while I’m away as they do when I’m home with them. That wouldn’t be possible without the family we have, the way we work together and look out for one another, for which I am so grateful.
I also had to stop my running around to have a quick meeting with all of us parents. We needed to work out logistics-all the little details of daily life. This was mostly about how Vicki and Alina would be dividing between them the responsibilities that Joe and I would normally be doing. I don’t always express it and I didn’t at that meeting but I feel very blessed to have two sisterwives that are so selfless and caring. I could truly leave on this trip and just know that I wouldn’t be worrying on behalf of my children or things I left undone. Not only does it give me peace of mind but also joy in my heart. Sure, we have our conflicts and there are days when everything doesn’t go perfectly. But what we do have is something pretty wonderful, that I wouldn’t trade for anything.
Back to that blasted list! I’d been so busy all day that I’d forgotten I was also supposed to make dinner for the family. What can I make that is fast, easy, delicious and nutritious?
Here’s what I ended up making: Baked brown rice with easy chicken gravy and veggie tray. I recently got the recipe for baked rice from my sister and I love it so I’m going to share it with you. So quick and easy!
Katie’s Baked Brown Rice
1 cup rice
2 cups water
1 Tbsp butter
Boil water and butter in pan on stovetop. Add salt. Measure rice and place in baking dish. Pour boiled water over rice. Cover with foil. Bake for 1 hour @375 degrees. Remove from oven. Fluff rice with fork.
It really is that easy and it turns out great every time. Of course I quadrupled this recipe for our family. There is a variation where you can omit the salt and add chicken or beef boullion. For the chicken gravy, I simply opened up 2 large cans of Cream-of-chicken soup adding only one can of milk, then threw in some cut up chicken breast. That was fast!
