Val’s Waffles

Here’s my recipe. This is for a small batch. Double, triple or quadruple the recipe as needed.

2 eggs
2 cups milk
1/2 tablespoon apple cider vinegar (to sour the milk)
¼ cup sugar (I like the flavor of brown sugar)
1/3 cup vegetable oil
2 cups whole wheat flour
2 tsp baking powder
1 tsp baking soda
½ tsp salt

Whisk the eggs. Add vinegar to milk and allow to sit for one minute. Add milk to eggs. Add oil and sugar. Whisk till blended. Measure flour into separate bowl. Add remaining dry ingredients and stir. Add flour mixture to egg mixture. Whisk only till blended. Mixture may be lumpy. (Do not over-mix.)

Scoop batter onto heated waffle irons. Cook to desired doneness.
